Shrimp tartare with crab pâté & passion fruit marinade
Ingredients for 1 portion:
- 2 items of Jumbo shrimps
- 10 gr. Crab pate
- 80 gr. Passion fruit vinegar
- 10 gr. Chilli oil
- 100 gr. Olive oil
- 2 fresh passion fruit
- Season pepper seaweed lemon (preferable quantity)
- Passion fruit pearls ( preferable quantity)
- Nori powder (preferable quantity)
- Salt & Pepper
Preparation Time: 10 minutes & execution time: 5 minutes
For the marinade:
Blend the flesh of the 2 passion fruits, the passion fruit vinegar, the olive oil, the salt and the pepper.
For the shrimp tartare:
Remove the shells and the intestines from the shrimps(keep the heads and the tails for the decor)
Chop the shrimps and marinate them with the marinade that we have created before.
Spice the dish with the season pepper seaweed lemon, salt and pepper.
Use the heads and the tails of the shrimps for decoration.
Add above of it 2 small quenelles of crab pate.
Decorate with passion fruit pearls.Διακοσμούμε με πέρλες passion fruit.
Dress the dish with the rest of the marinade.
Garnish the dish with the nori powder.
